What's millet all about?
Before rice was widely consumed in Asia, millet was the staple grain as long ago as 8300 B.C. Its legacy persists in the Chinese language, where
the signs for “millet” and “mouth” join to create the word “harmony.” This biblical seed was a staple of the Sumerians & grew in the Hanging Gardens
of Babylon. Today, millet is grown in India, China, & across eight African countries.
In India, millet is the principle ingredient in roti, or flatbread. Eaten as a porridge in Africa, they also brew millet beer. In the U.S., many think millet is for the birds, but we think that's bananas - millet is a true superseed! High in antioxidants, iron, and magnesium (a muscle building mineral), millet is also gluten-free.
This is a raw living food. Sprout it!
Soak seeds in water overnight, then drain & place in a jar covered with a wet paper towel. Rinse daily, & wait until tiny green shoots appear. Millet sprouts
have a mild taste, and can be eaten as is, blended, or juiced.
Unhulled millet also makes an excellent flour. Grind in your home mill, and experiment with gluten free baking at home.
